Super Stuffed Potatoes- Virtual Cooking Class

DSL Chef Level: Easy (Microwave, Broiler)

*Modification: could use microwave or air fryer instead of broiler

Ingredients: 

  • 4 slices of bacon, cooked and crumbled
  • 2 russet potatoes
  • 1/2 cup of sour cream OR plain greek yogurt
  • 2 scallions
  • 1/2 cup black olives
  • salt and pepper to taste
  • 1 cup of your favorite shredded cheese

Directions:

  1. Wash your hands
  2. Wash and pierce your potatoes a few times with a fork
  3. Place potatoes in the microwave for 12 minutes. Let cool for 5 minutes
  4. Preheat your oven to “broil” setting
  5. Carefully split your potatoes in half
  6. Scoop out the flesh of the potatoes into a bowl and add sour cream, salt, pepper, scallions, cheese, and bacon
  7. Scoop your mixture back into the potato skins and place on a baking sheet
  8. Broil in the oven until the tops are lightly brown
  9. Enjoy!
