Virtual Cooking Class- Veggies and “Power” Ranch Dip

DSL Chef level- easy (blender)

This is called “power” ranch because we are going to make our dip with protein packed cottage cheese! You can use a blender or food processor for this, or if you are a cottage cheese fan, you don’t have to blend it at all! Carly will be making a veggie tray to keep in her fridge to snack on all week long- so feel free to do the same.

Ingredients

  • 2 cups low fat cottage cheese
  • 1 cup low fat plain greek yogurt
  • 1 ounce dry ranch dressing mix

Your favorite dippable veggies and other treats:

  • Carrots
  • Celery
  • Broccoli
  • Cauliflower
  • Snap peas
  • Olives
  • Bell peppers
  • Cucumbers
  • Tomatoes
  • Pretzels

Instructions

  1. Wash your hands
  2. Prepare all of your veggies! (Wash and chop them to your liking)
  3. In a blender, combine the cottage cheese and Greek yogurt; blend until smooth.
  4. Pour contents into a large bowl and fold in dry ranch dressing packet.
  5. Mix until completely incorporated.
  6. Serve with your favorite fresh vegetables (such as carrot sticks, celery sticks, cherry tomatoes, cucumber slices, bell pepper slices, broccoli, cauliflower, sugar snap peas, etc).
  7. If you don’t have a blender, you can mix all ingredients together in a bowl by hand. It won’t be as creamy and will have a bumpy texture from the cottage cheese, but it’s still delicious!
  8. Keep ready to snack on in a veggie tray in your fridge and have healthy veggies all week long!
