One Pot Broccoli Bowtie Pasta- Virtual Cooking Class

DSL Chef Level: Intermediate (Stove)

Modification: could use ready pasta and microwave the broccoli if aren’t ready to use the stove independently

Ingredients:

  • 1 box of bowtie pasta
  • 1 bag of frozen broccoli (9-10oz)
  • Olive oil, for drizzling
  • 2 tsp minced garlic
  • 1 cup of starchy pasta water (Don’t forget to save it!)
  • 1/3 to 1/2 cup of parmesan cheese
  • Salt and Pepper to taste

Directions:

  1. Wash your hands
  2. Bring a large pot of water to boil- be sure to add salt to your water!
  3. Add the entire box of pasta AND your bag of frozen broccoli
  4. Boil for the amount of time listed on your pasta (approx 11 minutes)
  5. Take out one cup of the starchy water and set aside (Be careful, it will be hot!)
  6. Lower your stovetop to low heat
  7. Add 2 tablespoons of olive oil to the same pot
  8. Add your minced garlic and sauté for about 1 minute (it will cook fast)
  9.  Add your pasta and broccoli back to the pot
  10. Add the pasta water back to the pot
  11. Add your parmesan, and more olive oil if needed
  12. Stir, add salt and pepper to taste
  13. Enjoy!

Note: The cooked broccoli mixed with the olive oil, water and parmesan should make a sauce, similar to a pesto!
