Chicken Rice Bowl- Virtual Cooking Class

Chicken Rice Bowl

DSL Chef Level: Easy (microwave)

Ingredients: serves 4

  • For the sauce: *
  • 1/4 cup rice vinegar
  • 1 green onion, minced
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon minced fresh gingerroot

*You can also just use your favorite Asian inspired sauce like General Tso, Hoisin, Sweet Chili Sauce…

  • 1 package (8.8 ounces) ready-to-serve brown or white rice
  • 4 cups coleslaw mix (about 9 ounces)
  • 2 cups shredded rotisserie chicken, chilled
  • 2 cups frozen shelled edamame, thawed

Directions:

  1. Wash your hands
  2. For dressing, whisk together first 7 ingredients.
  3. Cook rice according to package directions.
  4. Divide among 4 bowls
  5. In a large bowl, toss coleslaw mix and chicken with half of the dressing.
  6. Serve edamame and slaw mixture over rice; drizzle with remaining dressing.
  7. Enjoy!

*This is also a GREAT meal prep recipe so you could eat one serving for lunch and put the other servings in Tupperware containers.
