Salmon with Zucchini and Rice- Virtual Cooking Class

Salmon

DSL Chef Level: Intermediate (stove, microwave)

Ingredients:

  • Fresh Salmon (we do 6oz per person in my family)
  • Green onion
  • 2 Tablespoons of butter
  • 1 lemon
  • Bag of jasmine microwavable rice (any rice will be fine!) 
  • 1 zucchini 
  • Salt, pepper, olive oil 
  • Greek seasoning (optional)
  • Dried Dill (optional) 

 

Instructions: 

  1. Preheat the oven to 420 degrees. 
  2. Cover a baking sheet with aluminum foil, and add the salmon. Lightly dust the salmon with greek seasoning and dried dill. Place in oven and bake for approximately 20 minutes (the thickness of your salmon might make your cook time different) 
  3. Using a peeler, very carefully make zucchini ribbons and add them to a bowl 
  4. Drizzle the zucchini with olive oil, sprinkle with salt and add a squeeze of lemon juice (and lemon zest if you’d like!) put to the side 
  5. Add 2 tablespoons of butter to a saucepan and melt on medium heat
  6. Chop your green onions and add the white part of the onions to the butter and cook until soft, remove from heat
  7. Microwave your rice, add to a bowl and add your butter/onion mixture
  8. Once your salmon is cooked, prepare your plate
  9. Pile on rice, add zucchini ribbons and salmon on top.
