Hash Brown Nests (GF)- Virtual Cooking Class

Hash brown nests

DSL Chef Level: Medium (oven, skillet)

Ingredients for 6 “nests”:

  • 1/2 pound shredded potatoes (if frozen be sure to thaw before!)
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • few shakes of pepper
  • 6 eggs (we will scramble together)
  • Bacon bits (for serving, optional)
  • Cheese (for serving, optional)
  • Cooking spray

Directions:

  1. Wash your hands!
  2. Preheat the oven to 400
  3. Coat 6 cups of a muffin tin
  4. In a large bowl mix your potatoes, butter, salt, and pepper
  5. Place a spoonful of potato mixture into each cup, and use your fingers to press them into nests
  6. Bake the nests until brown, 45-50 minutes
  7. Make the eggs:
  8. Crack your eggs into a bowl, add a dash of milk or water if you’d like
  9. Heat a skillet on medium heat, use a little oil or butter if needed
  10. Pour in your eggs and use a spatula to stir them until they are how you like them.
  11. Add salt and pepper to taste
  12. Once your nests are out and cooled a little bit, fill them with your eggs and top with bacon bits and cheese.
  13. Enjoy!
