Chicken Nachos- Virtual Cooking Class

Chicken Nachos

DSL Chef Level: Easy (oven or microwave)

Ingredients for 6-8 people

*Note: as you know, nachos can be made a million different ways! Get the ingredients you like the best OR that you already have on hand!

  • (15-ounce) can pinto beans
  • (2.25-ounce) can sliced black olives
  • 12 ounces sharp cheddar or Monterey jack cheese, or a combination (3 cups shredded)
  • 1 small roma tomato
  • 8 medium scallions
  • 1 small jalapeño
  • pound rotisserie chicken meat (from a 4 to 5-pound chicken)
  • 1/2 cup salsa
  • 1/2 cup queso
  • (16-ounce) bag restaurant-style tortilla chips
  • Sour cream, for serving

Directions:

  1. Wash your hands
  2. Preheat oven to 425
  3. Get ALL of your toppings prepped and ready. Chop, cut, drain, measure.
  4. Add the salsa to the chicken and mix together
  5. Line a baking sheet with foil
  6. Put a layer of tortilla chips on the baking sheet
  7. Add a layer of chicken mixture, cheeses, and beans
  8. Add another layer of chips, and another layer of cheese and beans
  9. Bake for 8 minutes or until cheese is melty and chips are starting to brown slightly
  10. Cover with the rest of your toppings.
  11. Enjoy!

*If using a microwave, arrange your chips on a plate, microwave your nachos 30 seconds at a time
