Mrs. Susan’s Energy Bites- Virtual Cooking Class

We’re throwing it all the way back to Week One for a special highlight on the Chef that started our Healthy Quarantine Cooking journey! And what better way to start off our journey than with a bite of sweet, creamy, salty delicious energy?! These nutty creamy bites pack a punch of protein and are a great way to kick start your day or hold you over between meals. Quick and easy to make, yummy, and ready for on-the-go adventures – we’re certain you’ll be snacking on these all quarantine long! Thank you Mrs. Susan for sharing your delightfully delicious recipe!

Ingredients

1 cup old fashioned oats 

1/2 cup flaxseed meal or oat flour

1/2 cup chocolate chips

1/2 cup any nut or seed butter 

1/4 cup honey 

1 teaspoon vanilla 

Instructions

Measure out all your ingredients beforehand. Plop all your ingredients down into a large bowl. 

Tip: Measure out your honey first, then use the same measuring cup for your nut butter. The slippery honey makes your nut butter plop right out! 

Mix all ingredients together thoroughly. 

Tip: Sometimes a spatula just doesn’t cut it – use a wooden spoon or even your hands (pls wash first!) to work this sticky mixture creamy! 

Roll your thick mixture into 1 inch balls or press into a 9 x 9 pan for bars. 

Tip: Rolling your bite sized balls make for easy storage and a quick pop-in-the-mouth treat!

To get your energy bites ready for quick consumption, place in freezer for an hour. 

Tip: For long lasting bites, store in fridge – though we doubt they’ll last long!

Helpful Hint: Get creative with your flavor combos! Add shredded coconut, dried fruit, or m&m’s for an extra tasty treat!
