One Pan Peanut Chicken- Virtual Cooking Class

One Pan Peanut Chicken

DSL Chef Level: Intermediate (Oven and stove)

Ingredients:

8oz gnocchi 

2lbs skinless chicken thighs or breasts thinly sliced 

4 tbsp honey 

4 tbsp vegetable oil 

4 tbsp Thai green curry paste (add little at a time, all curries are different)

4 tbsp peanut butter 

1 tsp salt 

2 heads of broccoli, cut into florets 

1 small red onion, cut into small wedges

3 tbsp salted peanuts, roughly chopped 

A handful of fresh cilantro (optional), roughly chopped 

juice of 1 lime 

 

Instructions:

  1. Preheat the oven to 350 and have a roasting dish at the ready. 
  2. Bring a pan of water to the boil, then add the gnocchi. Boil until they come to the surface, then take off the heat, drain and set aside.
  3.  Put the chicken into a large bowl. Add the honey, oil, curry paste, peanut butter and salt, and mix it all well with your hands, massaging in all that flavor. 
  4. Then put it into the roasting dish along with the broccoli, onions and gnocchi and bake for 30 minutes, giving it a stir halfway through.
  5.  Serve topped with the chopped nuts, cilantro and a squeeze of lime.
