Baked Zucchini With Cheesy Garlic Bread Crumbs-Virtual Cooking Class

Zucchini

DSL Chef Level- Easy (oven)

Ingredients, serves 4

  • 1/4 cup plus 2 tablespoons olive oil
  • 2 1/2 pounds of zucchini or yellow summer squash halved lengthwise
  • salt and pepper
  • 1 cup of panko bread crumbs
  • 1/2 grated parmesan cheese
  • 1/2 cup chopped fresh parsley (optional)
  • 2 garlic cloves grated or minced

Directions:

  1. Wash your hands!
  2. Preheat oven to 400
  3. Brush a baking sheet with olive oil
  4. Arrange the zucchini cut side up on the sheet
  5. Brush each zucchini with olive oil
  6. Season with salt and pepper
  7. In a large bowl add your cheese, bread crumbs, parsley, garlic, salt and pepper
  8. Using your hands (might want gloves!) toss these ingredients and make sure the garlic is really pressed into the panko
  9. Drizzle the bread crumb mixture with 1/4 cup olive oil
  10. top the zucchini with the bread crumb mixture and bake until the zuke is tender and the crumbs are golden brown, 35-40 minutes.
  11. Enjoy!
